My Perfect Vegetable Soup

Although I know many of our ideas of "perfect" are going to vary, this recipe suits me and my family just fine! I also would have probably used a few ribs of celery when I made this, but I didn't have it on hand. And you know what? I didn't even miss it. So, I may just leave it out from now on.


Vegetable Soup

1 bag of frozen veg. (green beans, peas, carrots, corn)
1/2 onion, chopped
3 potatoes, peeled and diced
1 can of corn, drained (we like corn)
1 can of tomato sauce
1 can of Campbell's Tomato Soup (plus one can of water)
1 box of beef broth
2 T sugar
salt and pepper to taste


Add all ingredients to a pot and bring to a boil until potatoes are tender. Turn to low and let simmer for 30 minutes (we like our veg. really tender).

We serve it with oyster crackers, peanut butter sandwiches and big glass of cold milk!!!

Perfect on this, a cold, freezing, foggy day!

Not sure why folks do a giveaway to celebrate their 1ooth post, but in keeping with those strange bloggy traditions, I'm doing one too.

I'm really happy to be giving this book away. It came out right when I was beginning my journey as a stay at home mom (SAHM) and it gave me a lot of pride as I read exactly what it meant to be a SAHM, and that no one was better at being a caregiver to my child than I was. And as if I didn't already know that my job was important, this book actually praised me and made me feel irreplaceable!

My First Giveaway!!!

If you've been keeping up with my blog for long, you'll know that I am a singer. I've been singing since I was a baby practically. And although I don't have a recording contract or do this professionally by any means, singing is still a big part of my life. I know when the time's right, God will bless me with the opportunity to sing for many, but for now, I'm ok with singing for my little girl and being a mommy.

So a couple of years ago I recorded this Christmas project on my own with the help of an awesome pianist in Knoxville named Stan Williamson. It's a simple recording of mostly voice and piano with songs like my own arrangement of "Angels We Have Heard on High," "Silent Night," "Sweet Little Jesus Boy," "Up on the Housetop," and "O Holy Night." Recording is expensive, so this is the only cd I have, but I've written a lot of songs, and would love to record more soon. Just say a little prayer for me!
