Our New Favorite Lunch

We were eating out at Applebees a few weeks ago and I decided to order GG some pizza from the kid's menu. When they brought out the pizza, it was just a flour tortilla with sauce and cheese on it. I was a little disappointed in it, but she gobbled it up! I was able to cut into bite size pieces right at the table and the thin crust was easy for her to chew. I thought that this would be something really easy for me to do at home because I really hate making her those greasy frozen pizzas and I'm always looking for something new to make. We get tired of ravioli, mac and cheese and ham and cheese sandwiches!

I bought some whole wheat tortillas, a jar of sauce that I keep in the fridge and a bag of pizza cheese (that $5 bucks will make a ton of pizzas!). I also thought that to bump up the healthiness factor, you could buy those tortillas made with spinach. I think I will try that when I run out of these.

So, I preheat the oven to 400, spray a baking sheet with cooking spray, lay down the tortilla, spread on a big tablespoon of sauce and then sprinkle on some cheese. I bake it for 10 minutes and then cut it into bite size pieces. She loves it!

  3. i used to make them with pita bread but my hubby being Italian makes them from scratch now... Sooooooo much better than a bought one and so much healthier! X:-)
