Don't Toss That Salad!

So, when was the last time you went in your back yard, yanked up some weeds and took them into the kitchen and cooked them up? Yeah, me neither! I don't think I've EVER done that...except for today!

I didn't "toss" that handful of dandelion weeds I pulled from the yard, I "tossed" them into a salad and wilted up a few! ha! This was so fun today ya'll, I'm totally into getting a garden going now!
In the garden (the folks who lived here before us left one intact...we haven't done such a great job keeping it up) there are what I thought were spring onions coming up, so I decided to dig a few. And come to find out, they weren't onions at all, but immature garlic! When I started cutting them up I thought they smelled like garlic and after a little research found out that they were in fact garlic bulbs that hadn't matured yet but looked more like a green onion with green tops and a small single bulb at the end. I rinsed them all and had a real mess of them! Not quite sure what to do with the rest actually!

Anyone have any ideas or recipes?

But anyway, I decided to take some of my tender dandelion greens and the garlic and wilt them down in a little olive oil like my grandmother used to do (except she used bacon fat). IT WAS SO GOOD! The only thing that would have made it better would have been to have a big slice of warm cornbread. But it was yummy nonetheless! A light, perfect little afternoon snack.

I even cooked them in a cast iron skillet!
                                             AUTHENTIC!

It left me with a really satisfying feeling that I forged around and pulled together a nice, healthy FREE lunch from the good earth with my own hands.

In other news, G had a lot of fun playing in her makeshift water table. I'm too cheap to buy a real one. So to keep her from playing in a bucket full of dirty rain water, I pulled out a plastic tote, filled it with warm water and set it out. I gave her cups to play with but she wanted to play with rocks. She kept throwing the same heavy rock into the water over and over. It was funny.

I, on the other hand, was happy to just put my feet up in the warm sun...it's about time!

  1. I never had dandelion ~ looks so yummy! My friends eat it all the time ~ with peppers, onions and eggs! I will have to try it!

I really want to try zucchini squash flowers ~ did you ever have them? I think though I am afraid to take the flowers off the zucchini and then not have any of the actual vegetable! Lol

Love the water table too ~ you are such a great mommy!

  2. Are dandelion greens bitter? I've never tried them, but my neighbor grows a plethora of dandelions in his yard every year, so I have an abundant supply.
