My Perfect Vegetable Soup

Although I know many of our ideas of "perfect" are going to vary, this recipe suits me and my family just fine! I also would have probably used a few ribs of celery when I made this, but I didn't have it on hand. And you know what? I didn't even miss it. So, I may just leave it out from now on.


Vegetable Soup


1 bag of frozen veg. (green beans, peas, carrots, corn)
1/2 onion, chopped
3 potatoes, peeled and diced
1 can of corn, drained (we like corn)
1 can of tomato sauce
1 can of Campbell's Tomato Soup (plus one can of water)
1 box of beef broth
2 T sugar
salt and pepper to taste


Add all ingredients to a pot and bring to a boil until potatoes are tender. Turn to low and let simmer for 30 minutes (we like our veg. really tender).

We serve it with oyster crackers, peanut butter sandwiches and big glass of cold milk!!!

Perfect on this, a cold, freezing, foggy day!
